Pumpkin Chocolate Chip Cookies



Honestly, I go a little pumpkin crazy this time of year. I know I'm not the only one (have you seen all of the pumpkin things floating around pinterest?). I've already shared with you my fave pumpkin soup recipe here, I've made my own pumpkin coffee creamer (which I am most certain I'll make again especially since there is left over pumpkin sitting in my fridge right now), I've made these pumpkin muffins (which are delish by the way), and now I'm sharing these pumpkin chocolate chip cookies with you today. Such a yummy fall baked good. This is my mom's recipe and I loved helping her make these when I was little. Just smelling them baking brings me back...love it!


Pumpkin Chocolate Chip Cookies

{preheat oven to 350 ~ cooking time: 10-15min}
*note - this recipe makes a lot of cookies - I usually halve it*

Ingredients:
1 28oz can pumpkin (not pumpkin pie filling)
2 beaten eggs
2 tbsp milk
2 tsp baking soda
2 cups sugar
1 cup cooking oil (I use canola) 
4 cups flour
1 tsp salt
2 tsp cinnamon
2 tsp vanilla
2 cups chocolate chips

Directions:
Combine pumpkin, eggs, milk, soda, sugar and oil. Then add the remainder of ingredients, mixing well. Drop by spoonful on lightly greased cookie sheet.
Bake for 10-15 min. This depends on your oven...mine usually takes more towards 12-15. You don't want these cookies gooey - you want them to be more "cake-like".
