Foodie Friday {Fresh Pasta Sauce}




If you remember, last week I shared how I threw together my own herb garden. I've had it together for a couple of weeks now and I was shocked how much the plants had grown in such a short time. The basil seemed to really be doing well & some of the leaves were quite large:


Time to put the herb garden to use {not gonna lie, I was pretty excited to use our own fresh herbs}!
I've had this Martha Stewart recipe for fresh tomato sauce pinned to my food board for a while now and have been wanting to try it out. Enter perfect moment here.

Ok. So the moment wasn't quite so perfect as I didn't have a key ingredient on hand...fresh tomatoes. So, I rolled with the punches. Here's my adapted recipe...

Fresh Pasta Sauce

• Can of Diced Tomatoes - I used half of a 28oz can of "no salt added" and drained the juice {or use fresh tomatoes!}
• Fresh basil - I tore off about 5 large leaves {if you want a lighter/stronger basil taste you can take away/add more}
• 1 clove of garlic {about 1 tsp}
• 1/8 cup of extra virgin olive oil
• A shake of pepper & salt
• 1/2 tsp dried parsley {again, I didn't have fresh - I don't think I could even taste this - so it's not entirely necessary} 

*Mix the above ingredients in a food processor - I used an electric mini chopper. You could use a blender too. Whatever works!

Add to hot pasta of your choice and you're done! 
Fresh tomato pasta sauce. Next time I'll definitely be using fresh tomatoes!
This is a super easy base recipe that you could definitely add to. So if you're adventurous, play around a little! 




Of course, parm cheese on top is a must!
I found the amounts in my adapted recipe to be just right for two people. So if you're feeding more than two mouths I would suggest making more. 
I will definitely be making this again this summer as it is easy & so fresh!
