Energy Bites



I'm a bit late to the game but, I finally got around to making some energy bites. I've been wanting to make these things for quite some time now, and I finally had all the ingredients on hand. Most recipes that I've seen are pretty much the same with slight differences here and there. What I love about these things is that they're quick & easy, and so, so delicious. 



Simply mix together:
  • 1 Cup Oats
  • 1/2 Cup Ground Flax Seed
  • 2/3 Cup of Unsweetened Shredded Coconut
  • 1 tsp Vanilla
  • 1/2 Cup Natural Peanut Butter
  • 1/3 Cup Honey
  • 1/4 tsp Cinnamon (optional)
  • 1/4 Cup Dark Chocolate Chips (or whatever kind you have on hand)
Once you have mixed everything together, pop the "dough" in the fridge for a bit. After "dough" has chilled for a bit, remove from fridge and roll into balls. Keep refrigerated for up to 1 week. 

***Note: I found that after my "dough" had chilled I needed to add a bit more peanut butter. I probably could have added honey as well. I just found that they were a bit dry and weren't sticking together the best. It was a quick fix!

I'm sure you could easily add nuts, raisins, or whatever to these and they would be just as good!



 I think these treats will find their way into my fridge often.
