Chocolate, Chia & Coconut Energy Bites
We're fans of energy bites in our house. They're a great little midmorning or afternoon snack to give you a little boost. Plus they're little bites of deliciousness! This recipe is a favourite of ours however, when I'm needing a little chocolate fix, these chocolate, chia & coconut ones are great to make! The bonus is that with these I don't feel so bad about indulging.
To Make:
Mix together dry ingredients:
1/2 cup chia seeds
2 Tbsp milled flax seed
1/2 cup shredded coconut
1/2 cup cocoa
3/4 cup oatmeal
Then add the following & mix well:
2 Tbsp honey
1 tsp vanilla
2 Tbsp melted coconut oil
3/4 cup peanut butter
Once your "dough" is completely mixed, chill in the fridge for 15-20min (this makes them easier to roll into balls). Once chilled, roll into bite sized balls and roll in coconut (I usually get about 2 dozen out of this recipe). Store in an airtight container in the fridge for up to one week. You can also keep in the freezer & take them out as you need them.
